Food Managers

The Snohomish Health District offers manager training to ensure that our community stays healthy by keeping all food establishments up to date with the ever-changing food environment and sanitation regulations.

State food regulations require that at least one designated person in charge (PIC) – a manager, supervisor, or shift leader – be present during all hours of operation for food establishments. The PIC must be able to demonstrate a knowledge of the food code and safety principles.

We offer two types of managers training: a two-hour PIC course and a 16-hour certification class. A manager recertification class is also offered. Our classes help ensure compliance with food safety critical items and best practices.

Topics covered include:

  • When to exclude sick food workers
  • Proper cooking, hot-holding, cold-holding, and cooling of potentially hazardous foods
  • Preventing cross-contamination
  • Personal hygiene and equipment sanitation practices

Person In Charge class

Managers, supervisors, and other persons in charge (PICs) who supervise of food service may be referred by Snohomish Health District staff to the PIC class for additional training. The class is free and lasts approximately 2 hours, including a short test. Preregistration is not required.

Classes are at the Snohomish Health District’s Everett location. The PIC class is held in Room 103 at 10 a.m. on the 2nd and 4th Tuesdays of the month. A Spanish PIC class is offered at 10 a.m. on the 3rd Tuesday of the month in Room 209 A.
